About Doodhpak

Doodhpak is a thick, creamy pudding of rice simmered slowly in full-fat milk until soft and luscious, sweetened with sugar and scented with saffron, cardamom and slivered nuts. Richer and thicker than ordinary kheer, it sits somewhere between kheer and basundi.

A classic festive and celebratory dessert, doodhpak is traditionally eaten warm with hot puri — the doodhpak-puri combination is a special-occasion treat in Gujarati homes.

Doodhpak is the Gujarati answer to rice pudding, and its quality is decided entirely by patience. Full-fat milk is brought to a simmer and held there, stirred and scraped down the sides of the pan, until it has reduced by roughly half and taken on a faint caramel note. Only then does a small quantity of short-grain rice go in — the proportion is deliberately sparing, because doodhpak should pour rather than stand.

Sugar is added late, once the rice is fully soft, since adding it early stops the grains from swelling properly. Cardamom, saffron steeped in a spoonful of warm milk, and charoli or slivered nuts finish the pot. The distinction from kheer is largely one of consistency and richness: doodhpak is made with more heavily reduced milk and less rice, which gives it the thicker, silkier body Gujarati cooks are after.

The story

Milk-and-rice puddings are ancient across India; doodhpak is Gujarat’s rich, saffron-laced version, reserved for festivals, fasts (when permitted) and family celebrations. Its name simply means ‘milk-cooked’.

Doodhpak is delicate rather than heavy, the milk reduced just far enough to coat a spoon while the rice grains stay soft and distinct within it. Cardamom carries the aroma, saffron adds colour and a faint bitterness that keeps the sweetness in check, and slivered almonds and pistachios give the occasional crunch. Served warm it is comforting; chilled it thickens and tastes richer.

Sweet shops across Gujarat sell doodhpak by weight, particularly around festivals, though it is fundamentally a home dish made for family occasions rather than a shop speciality. Temple kitchens prepare it in large quantities as prasad, and any Gujarati wedding or festival lunch worth the name will serve it alongside puri.

A few practical notes help when buying rather than making it. Doodhpak thickens noticeably as it cools, so a batch that looks correct in a hot pan will be stodgy by the time it reaches the table if the milk was over-reduced; shops that sell it chilled generally account for this. Check that the rice grains are visible and intact rather than broken down into paste, which indicates the pudding was cooked too hard or held too long. Saffron should be present as fine threads and a pale gold tint, not as a uniform yellow colour, and the aroma of fresh cardamom should be obvious before the first spoonful.
