About Sukhdi

Sukhdi (also gol papdi) is one of the simplest and most beloved Gujarati sweets: whole-wheat flour roasted in ghee until fragrant, then mixed with melted jaggery and pressed into a tray, where it sets into soft, fudgy squares dotted with nuts. Just three core ingredients, endlessly comforting.

Warming, energy-rich and quick to make, sukhdi is everyday home food, lunchbox treat and winter staple, and is often made as a humble prasad or to mark small celebrations.

Sukhdi — also called gol papdi, and known as gud papdi elsewhere — is the plainest sweet in the Gujarati repertoire and one of the most loved for exactly that reason. Whole-wheat flour is roasted in ghee over a low flame until it turns a rich brown and smells strongly nutty, which takes a good deal longer than most cooks expect. Jaggery is then stirred off the heat until it melts into the flour.

The mixture is pressed immediately into a greased tray, scored while still hot and left to set, because it hardens fast and cannot be cut cleanly once cool. The only real variables are the depth of the roast and the quality of the jaggery, which is why two batches made from the same three ingredients can taste entirely different. Cardamom and a scatter of nuts are common but strictly optional.

How it tastes

Sukhdi is dense, crumbly and deeply comforting, dominated by the toasted-wheat aroma of flour cooked slowly in ghee and the dark, mineral sweetness of jaggery rather than refined sugar. It is far less sweet than most Indian sweets and noticeably more savoury in character. A crumb of it should hold together briefly, then break apart cleanly.

Sweet shops sell sukhdi year-round in flat trays cut into diamonds, and it is inexpensive enough to be an everyday purchase rather than a special one. It is equally a home preparation — one of the first sweets many Gujaratis learn to make, because it needs only three ingredients and no sugar syrup to judge. Temples and community kitchens distribute it widely as prasad.

The practical appeal of sukhdi explains a great deal of its popularity. It requires no syrup work, no setting agent and no precise timing beyond the roast, it costs very little to make, and it keeps at room temperature for two to three weeks without spoiling, which in a hot climate before refrigeration was an enormous advantage. Those qualities made it standard provision for travellers, pilgrims and workers taking food to the fields, and they are why it remains the sweet most often sent with students leaving home and packed for long journeys today.
