The famous sweet of Porbandar

Khaja is Porbandar’s signature sweet — a rich, layered pastry made by folding and rolling wheat-flour dough into paper-thin sheets, deep-frying it to a golden crisp and steeping it in sugar syrup. The result is light, flaky and shatteringly crisp, sweet without being heavy. Sold fresh from the town’s famous sweet shops, Khaja is as much a souvenir as a snack, and visitors rarely leave without a box.

The dough

Wheat-flour dough is rolled out, layered with ghee or oil, folded and re-rolled repeatedly until it holds dozens of paper-thin leaves — the same lamination principle as puff pastry, done by hand.

The fry

The pieces are deep-fried slowly so the layers separate and set crisp without colouring too fast.

The syrup

Straight from the oil they go into sugar syrup, briefly, so the syrup coats and penetrates the layers without collapsing them.

Cooled and boxed, khaja keeps for weeks, which is why almost every visitor to Porbandar leaves carrying some.
